摘 要:MLM型结构脂质是指甘三酯骨架上排布脂肪酸为中链-长链-中链型的结构脂,作为改性油脂的代表而广受市场关注。以市售菜籽油和以其为原料酯交换而成的MLM结构脂为研究对象,设置不同的处理条件在常温下储存,探究其品质变化规律,并在结构脂中加入一定量的抗氧化剂以验证其抗氧化效用。结果表明,结构脂在经历13个月的储藏后各项氧化指标仍能维持正常水平,氧化稳定性指数(OSI)和共轭二烯值(CDV)水平甚至优于原装菜籽油;加入抗氧化剂能够改善结构脂的酸价(AV)、过氧化值(POV)、OSI值和CDV值,提高其氧化稳定性,但对反映二级氧化产物含量的茴香胺值(p-AV)和硫代巴比妥酸值(TBA)则无明显作用。本研究的开展有利于把握MLM结构脂的储藏性能,避免油脂酸败对人体造成危害,也能为其实现商品化生产,延长货架期提供一定的参考。MLM structural lipids refer to structured lipids with medium-long-medium-chain fatty acids arranged on the triglyceride backbone.As the representative of modified oils,MLM type structural lipids have attracted wide attention in the market.In the present study,commercial rapeseed oil and MLM structural lipids,which were obtained by transesterification,were used as the research object.Different processing conditions were set to store the lipids at room temperature to explore the quality change rule,and a certain amount of antioxidants were added into the structural lipids to verify their antioxidant effect.The results indicated that after storage of 13 months,the various oxidation indicators of structural lipids could still maintain regular levels,and the loxidation stability index(OSI)and conjugated diene value(CDV)levels were even better than those of the original rapeseed oil.The addition of antioxidants could improve the acid value(AV),peroxide value(POV),OSI value and CDV value of structural lipids,and improve the oxidation stability of the lipids,but had no significant effect on p-anisidine value(p-AV)and thiobarbituric acid(TBA),which reflected the content of secondary oxidation products.The development of the present study was conducive to grasping the storage performance of MLM structural lipids,avoid the harm of oil rancidity to human body,and also provide some reference for its commercialized production and shelf-life extension.
