摘 要:冻猪肉在长期的冷藏过程中由于冷藏温度的不均匀造成猪肉品质的下降,冷藏效果变差。为了提高冻猪肉的冷藏效果,本文通过仿真模拟的手段,建立冻猪肉冷藏模型,分析冷风机风速变化对冷库流场和温度场的影响,进而得到有利于冻猪肉长期冷藏的冷风机出风风速。结果表明:结合在不同冷风机出风风速下冷库内空气速度场和温度场分布,可以认为本文所研究的冷库对象,冷风机出风风速在7.32m/s~8.32m/s较为适合,可以提高冷库的冷藏效果。In the long-term refrigeration process of frozen pork, the uneven refrigeration temperature leads to the decline of pork quality and the deterioration of refrigeration effect. In order to improve the refrigeration effect of frozen pork, this paper establishes the refrigeration model of frozen pork by means of simulation, analyzes the influence of the change of wind speed of the cooling fan on the flow field and temperature field of the cold storage,and then obtains the outlet wind speed of the cooling fan which is conducive to the long-term refrigeration of frozen pork. The results show that: combined with the distribution of air velocity field and temperature field in the cold storage under different outlet wind speeds of the cold fan, it can be considered that the outlet wind speed of the cold fan in 7.32m/s ~ 8.32m/s is more suitable for the cold storage object studied in this paper, which can improve the refrigeration effect of the cold storage.
