摘  要:为了研究辣条的食品安全性,利用微核检测技术,分析不同稀释倍数的辣条提取液对蚕豆根尖的遗传毒理作用.实验分为:空白组、对照组和实验1~5组(按稀释倍数由高到低排序),分别给予等体积的H_(2)O、5 mg/L环磷酰胺和稀释200~0倍的辣条提取液处理蚕豆根尖,并取根尖细胞进行观察,对不同组数据进行统计学分析.结果表明:与空白组相比,实验1~5组均可诱导微核产生,具有一定遗传毒性;实验2、3和4组的微核数显著增加(t=1.96、2.49和3.42,P<0.05),实验1和5组的微核数增加但结果差异无统计学意义(P>0.05).与对照组相比,实验1和2组遗传毒性具有显著差异(t=−2.34和−2.07,P<0.05),实验3、4和5组遗传毒性与对照组相当且差异无统计学意义(P>0.05).在实验浓度范围内,辣条提取液诱导产生的微核数随溶液稀释倍数的降低而增加,并呈现剂量效应.In order to study the food safety of spicy strip,the micronucleus detection technology was used to test the genotoxicity of different concentrations of spicy strip extraction.In this study we set the blank group,positive control group and experimental group 1 to 5(ordered by dilution ratio from high to low).Root tips of Vicia faba were treated with deionized water,5 mg/L cyclophosphamide and different dilution ratio(200 to 0 times)spicy strip extraction,then root-tip cells were observed under the microscope.The result showed that compared with the blank group,the extracts of experimental group 1 to 5 could induce micronucleus generation and had certain genetic toxicity.The number of micronuclei of experimental group 2,3 and 4 were significantly increased(t=1.96,2.49,3.42,P<0.05).The number of micronuclei of experimental group 1 and 5 were increased,but the difference was not significant(P>0.05).Compared with the positive control group,there were significant difference in experimental group 1 and 2(t=−2.34,−2.07,P<0.05),while the experimental group 3,4 and 5 had the similar genotoxicity with the positive control group and no statistical significance was observed(P>0.05).In the range of experimental concentration,the number of micronuclei increased with the decrease of dilution ratio of spicy strip extraction,and showed does effect.
