摘 要:本实验研究了3个向日葵品种在生长周期内茎、叶及茎叶混合样的水分、蛋白质和总黄酮含量的动态变化。结果表明:向日葵不同品种、不同生长期以及同一品种的不同部位的水分、蛋白质、总黄酮含量均存在差异。水分含量整体呈现下降趋势,且茎>茎叶混合>叶;蛋白质含量为叶>茎叶混合样>茎,其中高秆食用葵叶片中蛋白质含量为8.10 g/100g、矮秆油葵茎为5.21 g/100g、矮秆油葵茎叶混合的含量为9.97 g/100g;总黄酮含量(以槲皮素计)为茎叶混合样>叶>茎,高秆食用葵叶片中为0.39 g/100g、矮秆油葵茎为0.59 g/100g、高秆食用葵茎叶混合为0.63 g/100g。向日葵在生长发育过程中,主要代谢产物蛋白质和生物活性物质黄酮类化合物的代谢具有一定的部位选择性。The dynamic changes of moisture,protein and total flavonoids of stems,leaves and mixture of stem-leaf of three varieties of Helianthus annus L.during the growth period were studied.The results showed that there were differences in the moisture,protein,and total flavonoid content of different varieties of Helianthus annus L.during different growth periods and in different parts of the same variety.The moisture content showed a downward trend as a whole,and stems>stem-leaf mixture>leaves.The protein content was leaves>stem-leaf mixture>stems,and 8.10 g/100 g of leaf of tall edible sunflower,5.21 g/100 g of stem of dwarf oil sunflower and 9.97 g/100 g of stem-leaf mixture of dwarf oil sunflower.The total flavonoid content(calculated as quercetin)was stem-leaf mixture>leaves>stems,and 0.39 g/100 g of leaf of tall edible sunflower,0.59 g/100 g of stem of dwarf oil sunflower,0.63 g/100 g of stem-leaf mixture of tall edible sunflower.This indicates that during the growth and development of Helianthus annus L.,the metabolism of proteins and flavonoids has certain selectivity to plant parts.
