摘 要:为了探究在日粮中添加麸皮-玉米-豆粕混合发酵饲料对樱桃谷肉鸭生长,胸肌肉品质以及胸肌脂肪代谢的影响,试验选用720只1日龄雌雄各半的樱桃谷肉鸭,随机分为4组,每组6个重复,每个重复30只。对照组饲喂基础日粮,试验组在日粮中添加2.5%、5.0%和7.5%的混合发酵饲料(fermented mixture feed, FMF)。肉鸭采用两阶段饲喂,试验周期为42 d。试验结果表明:日粮添加FMF对肉鸭的生长性能和胴体屠宰率均无显著影响,但显著增加了2.5%和5%FMF组肉鸭宰后45 min胸肌的红度值(P<0.05)。相较于对照组,日粮中添加2.5%FMF显著增加了肉鸭胸肌肌纤维横截面积(P<0.05),但显著降低了MyHC-I的蛋白表达量(P<0.05)。此外,日粮中添加7.5%FMF显著上调了胸肌中甘油三酯水平(P<0.05),并且所有FMF组的FASN的蛋白表达量都显著上升(P<0.05),5%和7.5%FMF组胸肌中PNPLA2的蛋白水平也显著(P<0.05)上升。由此表明:日粮中添加2.5%的混合发酵饲料能显著改善肉鸭的肌肉品质,但并不影响肉鸭生长性能。To investigate the effects of fermented mixture feed on the growth performance, carcass quality and lipid metabolism in the pectoralis muscle of Cherry Valley ducks, 720 1-day-old Cherry Valley ducklings, half males and half females, were obtained and randomly divided into 4 groups with 6 replicates and 30 ducklings in each replicate. The control group was fed with normal diet, and the experimental groups were fed with normal diet supplemented with 2.5%, 5.0% and 7.5% fermented mixture feed(FMF), respectively. The ducklings were raised with a two-stage diet for 42 days. The results showed that,in general,no significant difference was made in the growth performance of the ducklings through dietary supplementation with FMF. Compared with the control group,the 2. 5% and 5% FMF groups significantly increased the redness value at 45 minutes after slaughter in their pectoralis muscle( P< 0. 05). In addition,dietary supplementation with 2. 5% FMF significantly increased the cross-sectional areas of myofibers in their pectoralis muscle( P< 0. 05),but significantly decreased the protein content of MyHC-I therein( P< 0. 05). Moreover,compared with the control group,the 7. 5% FMF group had a markedly higher level of triglyceride in their pectoralis muscle( P<0. 05);dietary supplementation with FMF significantly increased the protein contents of FASN in the muscle( P < 0. 05),and significantly enhanced the PNPLA2 protein level in the 5% and 7. 5% FMF groups( P <0. 05). Therefore,dietary supplementation with 2. 5% FMF improved the meat quality and enhanced the lipid synthesis in the pectoralis muscle of the ducklings,but exerted no significant effect on the growth performance of the ducks.
