摘　　要：屠宰环节是“瘦肉精”检测的关键环节。我国颁布了相关法规和条例,建立并完善了相关规范和标准,强化屠宰场监管,持续加强屠宰环节“瘦肉精”检测和监督抽查工作。通过分析我国屠宰环节“瘦肉精”的监管现状,指出了存在的法律法规及配套制度不完善,牛羊产品风险较高,试纸条及检测方法存在不足等难题,由此提出了进一步完善法律法规及相关配套制度,加大屠宰环节“瘦肉精”监管力度,加强快速检测方法研究,提速信息化建设等建议。It is a key to detect“clenbuterol”during slaughtering.Relevant laws and regulations have been published in China to establish or improve relevant norms and standards,strengthen the supervision for slaughterhouses,and continue to strengthen the detection,supervision and random inspection for“clenbuterol”in slaughtering.In the paper,the status of such supervision was analyzed,and such problems as imperfect laws,regulations and supporting systems,high risk of cattle and sheep products,insufficient test strips and detection methods were pointed out,then relevant suggestions were proposed,including further improving laws,regulations and relevant supporting systems,strengthening the supervision for“clenbuterol”in slaughtering,quickening researches on rapid detection methods,and speeding up the construction of information technology.
