摘  要:较高水分大米的安全保质保鲜储备是保障大米食味的重要方法,为研究不同水分大米的适宜储藏条件,开展了含水率为14.4%、14.9%、15.4%大米在不同温度(21、24、27℃)和不同相对湿度(55%、65%、70%)条件下的模拟储藏,并在储藏过程中研究其品质变化规律。研究结果表明,高水分大米在温度低于24℃、相对湿度低于70%条件下,可保质保鲜储藏6个月以上;大米水分变化受储藏时间和温度影响较大,与其呈负相关,受相对湿度影响较小,与其呈正相关;大米食味值受水分影响较大,而水分与食味值变化呈负相关,水分为14.4%和14.9%的大米易保持较高食味值;大米黄粒米率及黄曲霉毒素程度较低,在该条件下均未超国家标准。该研究可为大米安全储藏措施提供了理论依据和数据支持。The safe storage of higher moisture content of rice is an important way to ensure the taste of rice.In order to screen the suitable storage conditions of variational moisture content of rice,the simulated storage of rice with moisture content of 14.4%,14.9% and 15.4% at different temperatures(21,24,27 ℃) and different relative humidity(55%,65%,70%) were carried out,and the quality change were monitored during storage.The results showed that high moisture content of rice could be stored for more than 6 months under the conditions of temperature lower than 24 ℃ and relative humidity lower than 70%.The change of moisture content of rice was negatively correlated with storage period and temperature,and positively correlated with relative humidity.The taste value of rice was greatly affected by moisture content of rice,and there was a negative correlation between moisture content and taste value.Rice with moisture content of 14.4% and 14.9% were easy to maintain a high taste value.The rate of yellow rice and the degree of aflatoxin were low,which did not exceed the national standard under this condition.This paper provides basis and data support for the safe storage of rice.
