摘  要:快速检测食品中的食源性病原体、腐败微生物和其他生物污染物对于维持食品质量和保护消费者安全至关重要。传统的检测方法包括使用一系列非选择性和选择性富集方法培养微生物,然后进行生化确认等,具有检测时间长、检测范围有限、检测成本高等特点。近年来,各种微生物的快速检测、鉴定和检测方法得到了发展,包括核酸法、免疫法和生物传感器法等。本文综述了国内外微生物快速检测技术的最新研究进展,包括基于核酸扩增检测、免疫分析和生物传感器,旨在为微生物快速检测提供有效策略,从而更好地保护公众健康。Foodborne pathogens in rapid detection of food microorganisms,and other biological pollutants is vital for maintaining food quality and protect the safety of consumers.The traditional detection methods include the use of a series of nonselective and selective enrichment method to cultivate microorganisms,and then biochemical and confirmation,which have the characteristics of long detection time,limited detection range and high detection cost.In recent years,rapid detection,identification and monitoring methods of various microorganisms have been developed,including nucleic acid method,immunoassay and biosensor method.This paper reviews the latest research progress of rapid microbial detection technology at home and abroad,including nucleic acid amplification detection,immunoassay and biosensor,in order to provide effective strategies for rapid microbial detection and better protect public health.
