摘 要:目的 探讨苦荞低聚肽的抗氧化能力及其对运动训练小鼠骨骼肌、肝脏自由基和能量代谢的影响。方法通过1,1-二苯基-2-三硝基苯肼等2种体外化学模型及氨基酸组成综合评价苦荞低聚肽的抗氧化能力,将成年雄性C57B6J小鼠随机分为安静空白组(CN)、运动空白组(TCN)、苦荞低聚肽低浓度[0.5 mg/(g·d)]+运动组(TL)、苦荞低聚肽中浓度[2 mg/(g·d)]+运动组(TM)、苦荞低聚肽高浓度[3 mg/(g·d)]+运动组(TH)。干预期5 w,干预第2 w开始同时进行运动训练,每天1 h,末次运动完成后处死小鼠。测定肝脏及骨骼肌丙二醛(MDA)、糖原、超氧化物歧化酶(SOD)、乳酸脱氢酶(LDH)和骨骼肌Na+,K+-ATP酶活性,并观察骨骼肌病理学组织形态变化。结果 与运动空白组相比,中、高浓度苦荞低聚肽的干预减轻了骨骼肌形态改变和炎性浸润现象,苦荞低聚肽显著抑制了运动训练后骨骼肌及肝脏脂质过氧化反应,提高了骨骼肌超氧化物歧化酶(SOD)、Na+,K+-ATP酶活性及糖原储备量。结论 苦荞低聚肽具有提高运动小鼠自由基清除能力,改善运动中能量代谢的潜在作用。[营养学报,2022,44(1):79-85]To investigate antioxidant capacity of tartary buckwheat oligopeptides and its effect on free radical metabolism and fatigue recovery in mice during exercise training. Methods The antioxidant capacity of tartary buckwheat oligopeptides was evaluated by a 1, 1-diphenyl-2-trinitrophenylhydrazine chemical method in vitro and amino acid composition. Adult male C57B6J mice were randomly divided into five groups: the control group(CN), training control group(TCN), low concentration of tartary buckwheat oligopeptides [0.5 mg/(g·d)]+ training group(TL), medium concentration of tartary buckwheat oligopeptides [2 mg/(g·d)]+ training group(TM) and high concentration of tartary buckwheat oligopeptides [3 mg/(g·d)]+ training group(TH). The experiment lasted 5 weeks. From the second week, the mice were simultaneously trained for 1 h every day. After the completion of the last exercise, the mice were sacrificed. The contents of malondialdehyde(MDA), glycogen, activities of superoxide dismutase(SOD), and lactate dehydrogenase(LDH)in the muscle were observed. Results Compared with the TCN group, the morphological changes and inflammatory infiltration of skeletal muscle in TM and TH groups were ameliorated. In the TL group, lipid oxidation in the skeletal muscle and live were inhibited after exercise training while the activities of superoxide dismutase(SOD), Na +, K + ATPase and glycogen storage were increased. Conclusion Tartary buckwheat oligopeptides can potentially enhance the ability of scavenging free radicals and improve energy metabolism during exercise. [ACTA NUTRIMENTA SINICA, 2022, 44(1):79-85]
