摘 要:从成都周边采集到一个野生大型真菌子实体,通过分离纯化获得菌株C42,并对其进行覆土栽培、农艺性状观测、营养成分分析和氨基酸营养价值评价。通过形态学和ITS序列分析鉴定,菌株C42为毛头鬼伞,形态特征与分子鉴定结果一致。与毛头鬼伞栽培品种菌株C20相比,2个菌株的观测性状无差异,测量性状差异显著,菌株C42的菌柄较长,综合农艺性状较好;除了水分含量,菌株C42的其他营养成分含量均高于菌株C20,粗多糖和粗蛋白含量差异显著;2个菌株的必需氨基酸质量分数均高于FAO/WHO模式谱,SRC值比较结果表明菌株C42的营养价值高于菌株C20。综合评价,该野生菌株C42的出菇农艺性状好,营养成分丰富,营养价值高,具有进一步开发利用的价值。A fruit body of wild macrofungi was collected from the surrounding area of Chengdu,which was isolated and purified named strain C42,and its soil covering cultivation,agronomic traits observation,nutrient composition analysis and amino acid nutritional value evaluation were carried out.The strain C42 was identified as Coprinus comatus by morphology and ITS sequencing analysis,and ITS morphological characteristics were consistent with molecular identification results.Compared with the cultivar strain C20,there was no difference in the observed characteristics between the two strains,but significant difference in measured characteristics,the strain C42 had longer stalks and better comprehensive agronomic characteristics;except water content,the contents of other nutrients in strain C42 were higher than those in strain C20,and the crude polysaccharide and crude protein contents were significantly different;the essential amino acid content of the two strains was higher than that of the FAO/WHO model,and the nutritional value of strain C42 was higher than that of strain C20.The comprehensive evaluation showed that the wild strain C42 had good agronomic characteristics,rich nutritional components and high nutritional value,and had the value of further exploration and utilization.
