摘  要:本文以38份有色大麦为试材,结合计算机图像识别技术研究了花青素含量与籽粒粒色的关系。研究结果表明不同粒色大麦的花青素含量不同,其平均含量由高到低依次为紫大麦>蓝大麦>黑大麦,且不同粒色籽粒花青素平均含量达极显著差异水平;籽粒粒色值表现为H(色相)值由大到小依次为紫大麦>蓝大麦>黑大麦,S(饱和度)和a(从洋红色至绿色的范围)值依次为紫大麦>黑大麦>蓝大麦,B1(蓝色)值由大到小依次为蓝大麦>黑大麦>紫大麦,R(红色)、G(绿色)、B2(亮度)、L(亮度)值由大到小依次为蓝大麦>紫大麦>黑大麦,b(从黄色至蓝色的范围)由大到小依次为黑大麦>蓝大麦>紫大麦;花青素与籽粒粒色存在线性相关关系(P<0.01),通过逐步回归建立模型,可以利用模型根据籽粒粒色快速地判断籽粒花青素含量的多少。In this paper,the relationship between anthocyanin concentration and grain color was studied by taking 38 parts of colored barley as the test material and combining computer image recognition technology.The results show that the anthocyanin concentration of barley of different grain colors is different,and the average content is purple barley>blue barley>black barley from high to low,and the average content of anthocyanin in different grain color grains reaches a very significant difference level.The grain color values characterized by H(Hues)value from large to small were purple barley>blue barley>black barley;the S(Saturation)and a(range from magenta to green)values were purple barley>black barley>blue barley in descending order;the B_(1)(Blue)values from large to small were blue barley>black barley>purple barley.The values of R(Red),G(Green),B_(2)(brightness),L(Brightness)from large to small were blue barley>purple barley>black barley,and the b(range from yellow to blue)value from large to small as black barley>blue barley>purple barley.There is a linear correlation between anthocyanins and grain color(P<0.01),and the model is established by stepwise regression,which can be used to quickly determine the amount of anthocyanin content in grains according to grain color。
