摘  要:地不容(Stephania epigaea H.S.Lo)的块根不仅具有药用价值,且富含淀粉,是一种新型植物淀粉资源。本研究比较了地不容淀粉与A-型小麦淀粉、B-型马铃薯淀粉和C-型豌豆淀粉的形态特征及理化性质。结果表明,地不容块根的总淀粉质量分数为46.16%,直链淀粉质量分数为25.92%,主要集中在块根中部的薄壁细胞内。其淀粉形态为卵圆形和圆形。地不容淀粉的平均粒径为15.58μm,粒径为10~30μm的淀粉含量占总粒径的76.31%。地不容淀粉为典型的B-型晶体结构,相对结晶度最高;淀粉颗粒内部单螺旋与双螺旋的比例为5.95%和28.51%。与其他3种淀粉相比,地不容淀粉表层有序结构比例最小,说明地不容淀粉较容易被消化吸收。Stephania epigaea H.S.Lo root tuber was not only of medicinal value,but also rich in starch,and it was a new kind of plant starch resource.This study compared the morphological characteristics and physicochemical properties of Stephania Epigaea H.S.Lo starch with A-type wheat starch,B-type potato starch and C-type pea starch.The results were as follows,the total starch content of Stephania epigaea H.S.Lo root tuber was 46.16%,and the amylose content was 25.92%.The starch was mainly concentrated in the parenchyma cells in the middle of the root tuber,and the shape of it was oval and round.The average particle size of Stephania epigaea H.S.Lo starch was 15.58μm,and the starch content in the range of 10~30μm accounted for 76.31%of the total size.Stephania epigaea H.S.Lo starch had a typical B-type crystal structure and the highest relative crystallinity.The proportions of single helix and double helix of Stephania Epigaea H.S.Lo starch were 5.59%and 28.51%.Compared with the other three kinds of starch,the proportion of ordered structure on the surface of Stephania epigaea H.S.Lo starch was the smallest.This result indicated that Stephania epigaea H.S.Lo starch was easy to be digested and absorbed.
