摘　　要：高压水射流以水作为主要工作介质,具有可再生、无污染、可循环的特点,具有清洁高效、绿色环保、操作方便等优点,已被广泛应用于工业和医学领域。阐述了高压水射流的工作原理及分类,分析了此项技术在肉类分割中应用的优点与挑战,介绍了高压水射流技术在肉类分割中的应用现状,并列举了两个成功应用的案例,指出了高压水射流技术在国内肉类分割中应用亟待解决的关键问题,并分析了此项技术在国内肉类分割中应用的可行性与前景。Water was taken as the main working medium in high-pressure water jet,and ithad the characteristics of renewable,pollution-free and recyclable,and it had the advantages of clean and efficient,green environmental protectionand convenient operation,and it had been widely used in industrial and medical fields.The working principle and classification of high-pressure water jet were expounded,and the advantages and challenges of this technology in meat segmentation were analyzed.The application status of high-pressure water jet technology in meat segmentation was introduced,and two cases of successful application were listed.The key problems to be solved urgently in the application of high-pressure water jet technology indomestic meat segmentation were pointed out,and the feasibility and prospect of the application of this technology in domestic meat segmentation were analyzed.
