摘  要:以安石榴苷为研究对象,考察不同pH、温度、缓冲液对安石榴苷稳定性的影响。结果表明:安石榴苷对pH、温度均敏感,在pH 2-6的酸性条件及温度低于40℃,其稳定性较好,随着pH的增大、温度的升高,安石榴苷的降解速率逐渐加快,其在碱性条件及高温条件下极不稳定;安石榴苷的降解速率与缓冲液的种类有关,其中,柠檬酸盐缓冲液对安石榴苷具有广义酸碱催化作用。安石榴苷在不同条件下的降解均符合一级动力学方程。其生产和存储过程应在酸性、低温条件下进行。The effects of different pH,temperature and buffer solution on the stability of punicalagin were investigated.The results showed that punicalagin was sensitive to pH and temperature.It was stable under the acidic condition of pH 2-6 and the temperature below 40℃.With the increase of pH and temperature,its degradation rate gradually accelerated,and it was extremely unstable under alkaline and high temperature conditions;the degradation rate of punicalagin is related to the type of buffer solution,among which citrate buffer solution has a broad acid-base catalytic effect on punicalagin.The degradation of punicalagin under different conditions accorded with the first-order kinetic equation.The production and storage process shall be carried out under acidic and low temperature conditions.
