摘 要:采用单凝聚-冷冻干燥法制备了茶树油单壁微胶囊,对其稳定性和热释放进行了研究.采用显微镜、扫描电镜(SEM)和傅里叶变换红外光谱(FTIR)观察茶树油微胶囊的形貌和包合效应,利用热重分析(TG/DSC)和热缓释-气相色谱质谱(HR/GC-MS)对茶树油单壁微胶囊的稳定性和热释放行为进行了研究.结果表明,制备的茶树油单壁微胶囊呈完整球形,表面光滑,包封率达83.5%,TG/DSC和HR/GC-MS显示茶树油单壁微胶囊失重温度在100~500℃区间,失重温度较茶树油增加,平均失重速率由7.2%/min降至2.0%/min,热释放成分变化不显著.以上结果表明:茶树精油胶囊化后,热释放温度范围扩宽,热稳定和热释放性能增强,为其在食品和烟草等热加工应用方面奠定基础.In this study,tea tree oil microcapsule was prepared by using method of single cohesion coupled with lyophilisation,and its stability and heat release were studied.The morphology and inclusion effect of tea tree oil microcapsule were observed by inverted microscope,scanning electron microscope and fourier transform infrared spectroscopy.The stability and heat release of tea tree oil microcapsule were used to demonstrate by thermogravimetric analysis and gas chromatography mass spectrometry coupled with heat release equipment.The results showed that tea tree oil microcapsule had a complete and smooth microsphere,and encapsulation rate was 83.5%.TG/DSC and HR/GC-MS showed that the weight-loss temperature of tea tree oil microcapsule was in the range of 100~500℃,which was higher than that of tea tree oil.Compared with tea tree oil and its microcapsule,the average weight-loss rate reduced from 7.2%/min to 2.0%/min by heating,and heat release composition also didn’t change significantly.The results indicated that the microcapsules prepared with gelatin and tea tree oil could widen the scope of heat release temperature.Properties of thermal stability and heat release were enhanced.Therefore,tea tree oil microcapsules have potential application and development prospect in food and tobacco industry.
