摘 要:该文以废烟末为原料,经低浓度乙醇提取制得废烟末提取物,然后通过正交试验确定了废烟末提取物与赖氨酸的美拉德反应最佳条件为反应温度80℃、反应时间24 h、烟草提取物与赖氨酸质量比为10∶1、反应pH为8,结果显示此时美拉德反应物的加香效果最佳。对最佳条件的美拉德反应产物进行气相色谱-质谱(GC/MS)分析,得到主要致香成分39种,对比反应前主要致香成分增加9种,主要致香成分质量分数增加14.74%。最佳条件的美拉德反应产物添加到再造烟叶中起到了改善再造烟叶感官质量的效果。In this paper,waste tobacco extract was extracted by low concentration ethanol.The optimal reaction conditions were determined by orthogonal test as follows:reaction temperature 80℃,reaction time 24 h,mass ratio of tobacco extract to lysine 10∶1,reaction pH 8.At this time,the flavoring effect of Maillard reactant is the best.By GC/MS analysis of the products of Maillard reaction under the best conditions,39 kinds of main aroma producing components were obtained.Compared with before the reaction,9 kinds of main aroma producing components were increased,and the content of main aroma producing components was increased by 14.74%.The optimum Maillard reactant was added to the reconstituted tobacco leaves to improve the sensory quality of reconstituted tobacco leaves.
