摘 要:为研究出栏前30日饲粮中添加饲用桑叶粉对育肥猪生长性能和猪肉品质的影响,试验选择40头体重相近的育肥猪,随机分成4组(每组10头)。对照组饲喂猪场原配方饲粮,试验组分别饲喂基础饲粮+5%饲用桑叶粉(试验I组),基础饲粮+10%饲用桑叶粉(试验II组),基础饲粮+15%饲用桑叶粉(试验III组)。试验期34 d,测定平均日增重、料重比、屠宰率、平均背膘厚度、眼肌面积、肌肉pH、肌内脂肪含量和脂肪酸含量等。结果显示:试验III组的平均日增重相比对照组减少了22.47%(P<0.05);试验III组的料重比相比对照组增加了13.55%(P>0.05);各试验组肌苷酸含量比对照组增加了7.97%、3.59%和2.39%(P>0.05);试验I组、II组和III组的月桂酸含量分别较对照组增加了100%、100%和200%(P<0.05);试验I组的花生四烯酸含量较对照组高2.13%,但试验II组和III组较对照组低12.77%和25.53%(P>0.05);其他脂肪酸含量则表现为对照组低于各试验组(P>0.05)。综上,出栏前30日饲粮中添加饲用桑叶粉可以改善育肥猪肉品质,提高猪肉风味和营养价值。This experiment was conducted to study effects of fodder mulberry leaf powder on growth performance and pork quality of finishing pigs before slaughter of 30 days. The control group was fed with the original diet of the pig farm,and the experimental group was fed with basal diet +5% fodder mulberry leaf powder(EXP I),basic diet +10% fodder mulberry leaf powder(EXP II),and basal diet +15% fodder mulberry leaf powder(EXP III). 34 days after the test,the average daily weight gain,feed weight gain ratio,slaughter rate,average back fat thickness,eye muscle area,muscle p H,intramuscular fat content and fatty acid content were measured. The results showed that the average daily gain of the EXP III decreased by22.47% compared with the control group(P < 0.05);the feed weight gain ratio of the EXP III increased by13.5% compared with the control group(P > 0.05);The content of inosinic acid in each experimental group increased by 7.97%,3.59% and 2.39% compared with the control group(P > 0.05);the content of lauric acid in EXP I,EXP II and EXP III increased by 100%,100% and 200% compared with the control group(P <0.05);the content of arachidonic acid(C20:4) in the EXP I increased by 2.13% compared with the control group,but in EXP II and EXP III was decreased by 12.77% and 25.53% compared with the control group(P> 0.05);The content of other fatty acids in the control group was lower than that in the three experimental groups(P > 0.05). In conclusion, adding fodder mulberry leaf powder to finishing pigs’ diet before slaughter of 30 days, could improve the quality of fattening pork and improve pork flavor and nutritional value.
