摘 要:随着收入的提高,中国城乡居民的食品消费也在发生变化。本文基于QUAIDS模型和EASI模型,利用近三十年的省级面板数据,通过测算城乡居民食品消费弹性和估计食品恩格尔曲线形状,分析中国城乡居民食品消费的模式和特点。实证结果证明:整体来看,城乡居民食品消费弹性呈下降趋势;分种类来看,城乡粮食消费均已饱和,食用植物油、蛋类和蔬菜瓜果消费进入稳定区间,肉类消费趋于饱和,城乡水产品消费仍有增长空间。中国城乡居民食品恩格尔曲线具有非线性形式,且粮食、食用植物油和蛋类的恩格尔曲线呈下降趋势,肉类、水产品和蔬菜瓜果的恩格尔曲线呈上升趋势,其背后反映的是食品消费的结构性下降。With the increase of income,the food consumption of urban and rural residents is also changing.This paper analyzes the modes and characteristics of food consumption of urban and rural residents by measuring the food consumption elasticity and estimating the food’s Engel curve.The QUADIS and ESAI model processed the provincial panel data in 30 years.The empirical results show that:on the whole,there has been a downward trend in the elasticity of food consumption of urban and rural residents.In terms of categories,grain consumption has been saturated in both urban and rural areas.The consumption of oil,eggs,vegetables and fruit has entered a stable level,meat consumption tends to saturate and aquatic products consumption still have room to grow.The food’s Engel curve of urban and rural residents has a nonlinear form.Engel curve of grain,oil and eggs illustrates a downward trend,while Engel curve of meat,aquatic products,vegetables and fruit has an upward trend.This reflects a structural decline in food consumption.
