摘　　要：中国传统饮食习俗在地方饮食、食物储存、饮食禁忌等方面具有多方面的生态内涵:适应各地的自然生态环境及动植物资源,各地饮食原料及主要食品体现出较大差异。各地饮食具有协调当地自然生态环境不利因素的特征;各地食物储存方式体现了对当地自然条件的充分利用及适应食物储存需要的创造性智慧,传统饮食习俗中的食物储存方式及技术,对于合理利用自然资源,避免食物浪费,纠正当前食物保存中过度运用防腐剂、保鲜剂的弊端等具有积极作用;各民族禁食动物、狩猎禁忌、植物食材采集方面的禁忌,对于动物保护、自然资源可持续利用、维护自然生态环境具有重要意义。针对传统饮食向现代饮食变迁带来的食品安全、生态环境问题,要求我们继承和发扬传统饮食习俗的合理方面,发挥传统饮食习俗在生态文明建设中的积极作用。Chinese traditional dietary customs have rich ecological connotations in local diet,food storage and dietary taboos,etc.Adjusted to the local eco⁃environment,animal and plant resources,and the unfavorable factors of the local natural eco⁃environment,the food raw materials and main foods vary from place to place.The different ways of food storage in different places reflect the full use of local natural conditions and the adjustment to the needs of food storage.Food storage methods and techniques in traditional dietary customs play a positive role in rationally utilizing natural resources,avoiding food waste,and correcting the excessive use of preservatives in today's food preservation.The food prohibitions of ethnic groups in terms of meat of certain animals,the hunting taboos,and plant⁃based food taboos are of great significance for animal protection,sustainable utilization of natural resources and maintenance of eco⁃environment.To address the food safety and eco⁃environment problems brought about by the transition from the traditional diet to the modern diet,it is essential to inherit and develop the reasonable aspects of traditional dietary customs and give full play to the positive role of traditional dietary customs in eco⁃civilization construction.
