摘 要:为了研究埋植褪黑激素(MLT)对蓝狐肌肉品质及MLT含量的影响,试验将40只健康且体况相近的2月龄蓝狐(雄性)随机分成对照组和MLT组,每组20只,对照组不做任何处理,MLT组在两肩胛骨间颈部皮下埋植2粒MLT埋植剂(36 mg/只,埋植时间为140 d)。测定各组肌肉系水力、pH值、常规营养成分(总水分、干物质、粗蛋白和粗脂肪)含量、氨基酸含量及MLT含量。结果表明:对照组和MLT组肌肉pH值和系水力均差异不显著(P>0.05);MLT组总水分含量为71.95%,比对照组降低了2.37%(P<0.05);干物质和粗脂肪含量分别为28.05%和5.85%,分别比对照组提高了6.65%(P<0.05)和36.47%(P<0.01);粗蛋白含量为65.16%,与对照组差异不显著(P>0.05)。与对照组比较,MLT组肌肉中的苏氨酸、缬氨酸、蛋氨酸、异亮氨酸、亮氨酸、赖氨酸、天冬氨酸、谷氨酸、甘氨酸、丙氨酸、丝氨酸含量均显著降低(P<0.05),苯丙氨酸、胱氨酸、酪氨酸、组氨酸、精氨酸、脯氨酸含量均差异不显著(P>0.05);必需氨基酸(EAA)、非必需氨基酸(NEAA)、鲜味氨基酸(DAA)和总氨基酸(TAA)含量分别降低了10.34%、6.18%、7.94%、7.88%(P<0.05),EAA/TAA略低于对照组,但差异不显著(P>0.05)。与对照组比较,MLT组的MLT含量提高了17.33%(P<0.05)。说明埋植MLT会降低蓝狐肌肉品质;埋植MLT 140 d后,MLT埋植剂在肌肉中仍有一定残留,存在一定安全隐患。In order to investigate the effects of melatonin(MLT) implanted on muscle quality and MLT content of blue foxes, in the experiment, forty 2-month-old blue foxes(males) with similar body condition were randomly divided into two groups(control group and MLT group) with 20 foxes in each group. The control group did not receive any treatment. In the MLT group, 2 MLT implants(36 mg per animal) were subcutaneously implanted in the neck between the two scapulae for 140 days. After the experiment, indicators such as water holding capacity, pH value, conventional nutrient components(total water, dry matter, crude protein and crude fat) content, amino acid and MLT contents of muscles were measured in each group. The results showed that there were no significant differences in muscle pH valve and system hydraulic capacity between control group and MLT group(P>0.05). The total water content in the MLT group was 71.95%, which was 2.37% lower than that in the control group(P<0.05). The dry matter and crude fat contents were 28.05% and 5.85%, respectively, which were 6.65%(P<0.05) and 36.47%(P<0.01) higher than the control group, respectively. The crude protein content was 65.16%, which was not significantly different from that of control group(P>0.05). Compared with the control group, the contents of threonine, valine, methionine, isoleucine, leucine, lysine, aspartic, glutamic, glycine, alanine and serine in the muscles of the MLT group were significantly decreased(P<0.05);the contents of phenylalanine, cystine, tyrosine, histidine, arginine and proline were not significantly different(P>0.05). The contents of essential amino-acid(EAA), non-essential amino acid(NEAA), delicious amino acids(DAA) and total amino acids(TAA) decreased by 10.34%, 6.18%, 7.94% and 7.88% respectively(P<0.05), EAA/TAA was slightly lower than those in the control group, but the difference was not significant(P>0.05).
