摘  要:β-胡萝卜素有很高的药理学及营养学价值,探究它在瓜果蔬菜中的分布是一个有趣且重要的科学问题。本文利用拉曼光谱成像技术检测胡萝卜和南瓜中β-胡萝卜素的含量分布,发现胡萝卜素皮层β-胡萝卜素的特征拉曼峰强度较根芯处高;南瓜表皮层β-胡萝卜素的特征拉曼峰强度也较果肉处高.这个结果深化了果蔬皮下更具营养的朴素观念,也展示了一种确定β-胡萝卜素在果蔬中含量分布的实验方法.Carrots and Pumpkin contain a large number ofβ-carotene,have a high pharmacological and nutritional value.Becauseβ-carotene contains a large number of delocalized electrons and has photoelectric characteristics,a laser with excitation wavelength of 532 nm can produce resonance Raman effect in the absorption spectrum ofβ-carotene in Raman scattering.The Raman spectra of carrot and Pumpkin are measured and the image of Raman is made.It is found that the intensity of characteristic Raman peaks ofβ-carotene in carrot epidermis is higher than that in root core,the intensity of characteristic Raman peaks in theβ-carotene of Pumpkin skin is also higher than that in the pulp.This study provides a new method to measure the content ofβ-carotene by using Raman mapping technique.
