摘  要:为研究燕麦中呕吐毒素(DON)及其隐蔽型毒素脱氧雪腐镰刀菌烯醇-3-葡萄糖(D3G)的降解效果,采用臭氧处理法,在考虑灭毒效果和营养损失的基础上,通过改变臭氧含量和处理时间检测臭氧处理对燕麦中的DON、D3G的降解效果及对燕麦品质的影响。结果表明,随着臭氧含量和处理时间增加,DON降解率逐渐上升,D3G降解率也有小幅上升,在臭氧输送速度1.2 L/min、时间50 min时,DON降解率最大,达到45.76%。在臭氧输送速度1.2 L/min、时间40 min时,D3G降解率最大,达到43.61%。The degradation of deoxynivalenol(DON)and its cryptic deoxynivalenol-3-glucose(D3G)in oat were studied by ozone treatment.On the basis of considering the effect of detoxification and nutrition loss,the effects of ozone treatment on the degradation of DON and D3G in oat and on the quality of oat were examined by changing the ozone content and treatment time.It turns out that,with the increase of ozone content and treatment time,DON rate of degradation increased;The degradation rate of D3G also increased slightly.At ozone transport rate of 1.2 L/min and time of 50 min,DON reached the highest degradation rate of 45.76%.At ozone transport rate of 1.2 L/min and time of 40 min,D3G reached the highest degradation rate of 43.61%.
