摘 要:榨菜是我国特色加工蔬菜,榨菜产业是一、二、三产有机融合的典型产业。当前,榨菜生产与加工过程中产生的大量尾菜与腌制废水,造成资源浪费与环境污染。本文总结了榨菜加工过程中尾菜的几种开发利用形式,分析了榨菜产业的资源化利用现状,概括了榨菜加工废水的处理方式,并提出了相关建议,为发展绿色清洁生产与资源高效利用的环境友好型榨菜产业提供参考。Pickled mustard is a characteristic processed vegetable in China,and the pickled mustard industry is a typical industry with the organic integration of primary,secondary and tertiary industries.At present,a large number of tail vegetables and pickling waste water produced in the production and processing of mustard tuber caused waste of resources and environmental pollution.This paper summarized several forms of development and utilization of pickled mustard in the processing process,analyzed the current situation of resource utilization of pickled mustard industry,summarized the treatment methods of pickled mustard processing wastewater,and putforward relevant suggestions,so as to provide reference for the development of environment-friendly pickled mustard industry with green and clean production and efficient utilization of resources.
