摘  要:红曲发酵制品含有多种次级代谢产物,如莫纳克林K(MK)、红曲色素、γ-氨基丁酸(GABA)等。红曲发酵制品对人类的身体健康有很大的益处,目前广泛应用于医药和保健品等大健康产业。而在动物饲料中添加红曲发酵制品也能有效地提高畜禽的免疫力,利于畜禽健康。但因红曲发酵制品中含有肾毒性的桔霉素,大大限制了其在饲料中的应用。为了利用红曲发酵制品提升饲料品质,研究者们不断改良红曲菌株,优化生产工艺与设备,以获取次级代谢产物含量高且低产或不产桔霉素的红曲发酵制品。本文综述了提高红曲次级代谢产物的产量、降低桔霉素含量方面的研究进展,以及红曲发酵制品在饲料行业的应用。The red yeast fermentation product contains a variety of biologically active substances such as monaclin K(MK),monascus pigment,gamma-aminobutyric acid(GABA),and the like.The red yeast fermentation product has a great advantage of human health,and is currently being widely used in a large health industry such as medicine and health products.In the animal feed,the red yeast fermentation product can also effectively improve the immunity of livestock and poultry,which is beneficial to livestock and poultry health.However,due to the nephrotoxicity of citrinin,the application of red yeast fermented products in feed has been greatly restricted.In order to enhance the quality of the breeding industry,the researchers continue to improve the monascus strains,optimize the production process and equipment to obtain red yeast fermented product having high biologically active material content and low-yielding or non-citrinin-producing strains.This paper reviewed the research progress increasing the yield of secondary metabolites of red yeast and reducing the content of citrinin,as well as the application of red yeast fermented products in feed industry.
