摘 要:随着我国经济的飞速发展,我国居民的饮食结构得到了不断调整与改善,对加工肉制品的消费比重不断上升,也对其质量安全提出了更高的要求。原料肉供应链体系的构建和完善是保障加工肉制品质量安全的首要条件。本文简述了加工肉制品原料肉的供应安全管理现状及存在的问题,并提出改善建议。With the rapid development of the economy,the dietary structure of Chinese residents has been continuously adjusted and improved,the proportion of consumption of processed meat products has continued to rise,higher requirements have been put forward for their quality and safety.The construction and improvement of raw meat supply chain is the first condition to ensure the quality and safety of meat products.This article briefly describes the current situation and existing problems of the supply safety management of raw meat for processed meat products,and put forward suggestions for improvement.
