摘  要:猕猴桃籽作为猕猴桃加工的副产物具有较高的营养价值,为了提高猕猴桃籽油的利用率,对海沃德猕猴桃籽油的抗氧化能力进行研究,并采用GC-MS对猕猴桃籽油脂肪酸组分进行了分析。结果表明,猕猴桃籽油对DPPH·、ABTS^(+)·、·OH、O_(2)^(-)·均有一定的清除效果,其中对DPPH·和O_(2)^(-)·的清除效果较好;脂肪酸组分主要包含亚油酸、油酸、亚麻酸、棕榈酸,并含有角鲨烯、硬脂酸等,其中亚麻酸含量最高,为50.96%,其不饱和脂肪酸占总油脂的81.04%。研究表明,海沃德猕猴桃籽油具备一定的抗氧化能力且不饱和脂肪酸含量丰富,具有一定的开发价值。As a by-product of kiwifruit processing,kiwifruit seeds have high nutritional value.In order to improve the utilization rate of kiwifruit seed oil,the antioxidant capacity of Hayward kiwifruit seed oil was studied,and the compositions of kiwifruit seed oil were analyzed by GC-MS.The results showed that kiwifruit seed oil had certain scavenging effects on DPPH·,ABTS^(+)·,·OH and O_(2)^(-)·,among which the scavenging effects on DPPH·and O_(2)^(-)·were better.The fatty acid compositions mainly included linoleic acid,oleic acid,linolenic acid,palmitic acid,squalene,stearic acid,etc.The content of linolenic acid was the highest,which was 50.96%,and the unsaturated fatty acid accounted for 81.04%of the total fatty acid.The results showed that kiwifruit seed oil had certain antioxidant capacity and the unsaturated fatty acid content was rich,which had certain development value.
