摘 要:采用热回流提取小茴香籽抗氧化物,在单因素试验基础上,运用响应面法对影响提取工艺的因素粉碎粒径、提取时间及料液比进行优化,测定了小茴香籽提取物对ABTS+·和·OH的清除能力。结果表明,粉碎粒径对小茴香籽提取物得率影响达到了极显著水平,小茴香籽提取物得率最佳工艺条件为粉碎粒径0.45 mm,提取时间2 h,料液比为1∶15(g∶mL),在此条件下,小茴香籽抗氧化物得率为4.24%。在质量浓度2~10 mg/mL条件下,小茴香籽提取物对ABTS+·清除率和·OH的清除率呈随提取物的质量浓度增加而增大的变化趋势,为小茴香籽提取物抗氧化的应用提供了理论依据。In this paper,antioxidants were extracted from fennel seeds by heat reflux.On the basis of single factor experiment,the factors affecting the extraction process,such as particle size,extraction time and ratio of liquid to material,were optimized by response surface methodology,the scavenging ability of fennel seed extract to ABTS+·and·OH was determined.The results showed that the effect of particle size on the yield of fennel seed extract was very significant.The optimum technological conditions for the yield of fennel seed extract were 0.45 mm particle size,2 h extraction time and 1∶15(g∶mL)ratio of liquid to material(MG/ML),the antioxidant yield of fennel seeds was 4.24%.Under the conditions of concentration of 2~10 mg/mL,the ABTS+·and·OH removal rate of fennel seed extract increased with the increase of the concentration of fennel seed extract.
