摘  要:目的:通过研究深入了解蛋糕店工作人员沙门氏菌携带状况,并对相关菌型加以分析,严格把关食品安全,从源头上切断病菌传播链,保障公共卫生安全。方法:采集6783份2019年1月-2021年12月泉州市50家蛋糕店从业人员预防性健康体检肛拭子标本,结合传统培养法、荧光PCR法检测所选标本。结果:50家蛋糕店检测6783份沙门氏菌肛拭子标本,测得阳性标本28株,检出率为0.41%,其中男15例,检出率0.50%,女13例,检出率0.34%;不同性别检出率比较,差异无统计学意义(P>0.05)。从年龄分布上看,从业人员主要是青年,其次为中年,青年与中年沙门氏菌检出率比较,差异无统计学意义(P>0.05)。从事不同工种的从业人员,沙门氏菌检出率略有不同,且差异无统计学意义(P>0.05)。从全年检测结果来看,阳性菌株主要集中在7月、5月、8月和10月,其中10月份最高,阳性检出率为0.87%。检出的28份标本中,包含5个菌群,8个血清型;在5个菌群中,其中B群9株(32.14%),D群8株(28.57%),E4群6株(21.43%),E1群4株(14.29%),C1群1株(3.57%)。在8个血清型中,肠炎沙门氏菌有8株,占比最高,为28.57%,随后依次是山夫登堡沙门氏菌、阿贡纳沙门氏菌、德尔卑沙门氏菌、火鸡沙门氏菌、伦敦沙门氏菌、乙型副伤寒沙门氏菌,纳米比亚沙门氏菌占比最低。结论:50家蛋糕店从业人员沙门氏菌携带率比较高,食品安全隐患仍然存在,需要加强从业人员健康检查和店铺日常卫生监管,规范操作流程,确保食品安全,保障大众健康。Objective:To deeply understand the Salmonella carrying status of staff in cake shops,analyze the relevant bacteria types,strictly control food safety,cut off the transmission chain of bacteria from the source,and ensure public health safety.Method:A total of 6783 anal swabs samples from preventive health examination of employees in 50 cake shops in Quanzhou from January 2019 to December 2021 were collected.The selected samples were detected by by traditional culture method and fluorescence PCR method.Result:A total of 6783 Salmonella anal swab samples were detected in 50 cake shops,28 positive samples were detected,and the detection rate was 0.41%,including 15 males and 13 females,with the detection rate of 0.50%and 0.34%.There was no significant difference in the detection rate between sexes(P>0.05).In terms of age distribution,the employees of the cake shop are mainly young,followed by middle-aged.There was no significant difference in Salmonella carrying rate between young and middle-aged(P>0.05).For the employees engaged in different types of work in the cake shop,the Salmonella carrying rate was slightly different,and the difference was not statistically significant(P>0.05).From the annual test results of the whole year,the positive strains were mainly concentrated in July,May,August and October,of which October was the highest,and the positive detection rate was 0.87%.Among the 28 samples,there were 5 flora and 8 serotypes.Among the five bacterial groups,9 strains(32.14%)of group B,8 strains(28.57%)of group D,6 strains(21.43%)of group E4,4 strains(14.29%)of group E1 and 1 strain(3.57%)of group C1.Among the 8 serotypes,8 strains of Salmonella enteritidis accounted for the highest proportion(28.57%),followed by Salmonella sanfdenberg,Salmonella agona,Salmonella delpy,Salmonella Turkey,Salmonella London,Salmonella paratyphoid B,and Salmonella namibia accounted for the lowest proportion.Conclusion:The Salmonella carrying rate of employees in the cake shop is relatively high,and potential food safety hazards sti
