摘  要:以盐水火腿、酱卤肉制品(肘花)、风干肉为应用实例,对添加巴博卡火腿酱的产品在风味、口感、色泽等方面进行综合测试和分析比较。结果表明,在肉制品加工过程中,添加0.3%~0.4%巴博卡火腿酱,可以起到显著的去腥除异味效果,能使产品风味更饱满、更有层次感,同时有助于提升肉制品色泽和整体口感。巴博卡火腿酱产品为工业化制备的食品配料,使用起来非常方便。Salted ham,saucedstewed meat products(elbow flower)and air dried meatweretakenas application examples,and the flavor,taste,color of the products added with Barbacoa ham sauce were comprehensively tested and analyzed.The results showed thatin the meat product processing,the additionof 0.3%-0.4%Barbacoa ham saucecould play a significant effect in deodorization and odor removal,and it could make the product flavor more full and more hierarchical,and the color and overall taste of meat products could be improved.Barbacoa ham sauceproducts were industrialized food ingredient,and they were used conveniently.
