摘 要:近年来,我国肉鸡产业飞速发展,规模不断扩大,稳居世界生产量第二位,同时由于鸡肉高蛋白、低脂肪、低胆固醇及低热量的营养特性深受消费者喜爱,成为了继猪肉之后我国消费量为第二大的品类。但由于我国肉鸡加工行业起步较晚,产业化程度不高,与世界先进水平还有一定差距,在生产与加工方面还存在一些问题。为了促进我国肉鸡生产加工产业的进步,本文主要概述了我国肉鸡生产及鸡肉加工产品现状,分析了鸡肉加工新技术研究趋势,并对我国肉鸡加工业存在的问题及发展方向进行了分析和总结。In recent years,our broiler industry has rapidly developed and scaled up steadily,ranking the second in world production volume,and at the same time has become the second largest category of consumption in China after pork because of the highly proteinaceous,low-fat,low cholesterol and low calorie nutritional characteristics of chicken which are highly favored by consumers.However,due to the late start of broiler processing industry in China,the degree of industrialization is not high,there is still a certain gap with the world's advanced level,and there are still some problems in production and processing.In order to promote the progress of broiler production and processing industry in China,therefore,this paper mainly outlines the current state of broiler production and processing in China,analyzes the research trends of new technology on chicken processing,and finally analyzes and summarizes the existing problems and the development direction of broiler processing industry in China.
