摘  要:【目的】研究马杜罗茄衣中性香气物质随化学品质指数的变化规律,以期为国产雪茄茄衣的可用性评价和工业使用提供理论依据。【方法】以海南产区马杜罗茄衣为试验材料,测定烟叶化学品质指数及各类中性香气物质含量,并对化学品质指数和中性香气物质含量进行相关分析及回归分析。【结果】马杜罗茄衣烟叶各化学品质指数与中性香气物质的变异范围在0.12~0.50,均属于中等变异程度。糖碱比和糖氮比与苯丙氨酸转化产物、类西柏烷降解产物和新植二烯含量及中性致香物质总量分别呈显著(P<0.05,下同)或极显著(P<0.01,下同)正相关关系,氮碱比和钾氯比分别与类胡萝卜素降解产物含量呈极显著负相关关系。回归分析结果表明,在一定范围内:提高糖碱比,苯丙氨酸转化产物、类西柏烷降解产物和新植二烯含量及中性香气物质总量持续升高;提高糖氮比,苯丙氨酸转化产物、类西柏烷降解产物和新植二烯含量及中性香气物质总量均先降低再升高,分别在糖氮比为0.49、0.47、0.56和0.51时达最低值;提高氮碱比,类胡萝卜素降解产物含量先降低再升高,最低值时氮碱比为0.93;提高钾氯比,类胡萝卜素降解产物含量显著降低。【结论】马杜罗茄衣化学品质指数与中性香气物质密切相关,利用回归模型可判断香气物质随化学品质指数的变化趋势,对马杜罗茄衣品质调控及协调性研究具有重要参考价值。【Objective】To study the change law of neutral aroma substances in Maduro wrappers with chemical quality index,so as to provide theoretical basis for the usability evaluation and industrial use of domestic cigar wrappers.【Method】With the Maduro wrapper in Hainan production area as the test material,the chemical quality index of tobacco leaves and the contents of various neutral aroma substances were determined,and the correlation analysis and regression analysis were carried out on the chemical quality index and the content of neutral aroma substances.【Result】Variation range of each chemical quality index and neutral aroma substances of Maduro wrapper tobacco leaves was 0.12-0.50,indicating a moderate degree of variation.Sugar-nicotine ratio and sugar-nitrogen ratio had significant(P<0.05,the same below)or extremely significant(P<0.01,the same below)positive correlations with the total amount of phenylalanine conversion products,cembranoids degradation products,neophytadiene and neutral aroma substances.Nitrogen-nicotine ratio and potassium-chloride ratio were significantly negatively correlated with the content of carotenoid degradation products.Re-gression analysis showed that within a certain range:If sugar-nicotine ratio increased,the contents of phenylalanine conversion products,cembranoids degradation products,neophytadiene and the total amount of neutral aroma substances also continued to increase;if the sugar-nitrogen ratio increased,the contents of phenylalanine conversion products,cem-branoids degradation products,neophytadiene and the total amount of neutral aroma substances first decreased and then increased,reaching the lowest values when the sugar-nitrogen ratio was 0.49,0.47,0.56 and 0.51;if nitrogen-nicotine ratio increased,the content of carotenoid degradation products first decreased and then increased with the,and the lowest nitrogen-nicotine ratio was 0.93;when the potassium-chloride ratio increased,the content of carotenoid degradation products decreased significantly.【Conclusion
