摘  要:为了建立一种云南蒙自甜石榴皮多酚提取工艺,确定一种更优的石榴多酚含片配方,以云南蒙自甜石榴皮为原料,采用福林酚比色法测定总多酚的含量,运用单因素试验和正交试验优化提取工艺;直接粉末压片法获得多酚含片,通过感官评分,运用单因素试验和正交试验优化含片配方。结果表明,获得最优石榴皮多酚提取工艺条件为温度30℃、料液比1∶10(g/mL)、提取溶剂为60%的乙醇溶液、提取时间30 min,获得的石榴皮多酚提取量为8.591 mg/g;在添加麦芽糊精12.88%,三氯蔗糖0.008%,硬脂酸镁0.212%的固定条件下,按多酚11.35%、淀粉40.62%、白砂糖34.93%比例压制含片,可以得到甜味、苦味适中的含片。本研究获得的石榴皮多酚最优提取工艺和最优含片配方,可为云南蒙自石榴的精深加工提供参考。To establish an extraction process of pomegranate peel polyphenols from Yunnan Mengzi sweet pomegranate peel,and determine the formula of pomegranate polyphenols buccal tablets.Yunnan Mengzi sweet pomegranate peel was used as raw material,the content of total polyphenols was determined by the Foline-phenol colorimetric method,single factor test and orthogonal test were used to optimize the extraction process;the buccal tablets was obtained by direct powder compression,single factor test and orthogonal test were used to optimize the formulation of buccal tablets by sensory evaluation.The opti mal extraction conditions for pomegranate peel polyphenols were as follows:extraction temperature 30℃,solid-liquid ratio of 1∶10(g/mL),extraction solvent of 60%ethanol solution and extraction time of 30 min.The extraction yield of pomegranate peel polyphenols was 8.591 mg/g;Under the condition of maltodextrin,sucralose,and magnesium stearate fixed,the optimization formulation of buccal tablets were pressed according to the ratio of 11.35%polyphenol,40.62%starch and 34.93%sugar,and the sweet and bitter buccal tablets could be obtained.In this study,the optimal extraction technology of pomegranate peel polyphenols and the optimal formulation of buccal tablet was obtained which can provide references for deep processing of Yunnan Mengzi pomegranate.
