摘  要:红曲色素(Monascus pigment)是一种天然的色素,作为我国食品卫生法规中允许使用的可食用色素之一,被广泛应用于肉制品、豆制品、酒、糖和果汁等食品的着色。本文建立了一种使用反相液相色谱串联质谱检测器测定6种红曲色素的分析方法,并对测定方法进行了验证。选取番茄酱作为典型基质对6种红曲色素的加标回收率进行了验证,结果表明潘红胺、红曲红胺、红曲素、红斑素、红曲黄素和红曲玉红素的加标回收率分别为101.4%~108.9%、82.7%~96.8%、95.3%~98.0%、87.5%~93.6%、93.5%~97.1%和89.7%~94.2%,相对标准偏差<15%,满足国家标准GB/T 27404—2008要求,方法可靠。Monascus pigment is a natural pigment.As one of the edible pigments permitted in China’s food hygiene regulations,it is widely used in coloring meat products,bean products,wine,sugar,fruit juice and other foods.which contains a variety of compounds,mainly including red,yellow and orange.It is generally obtained from rice or soybean after fermentation by Monascus fungi,extraction and concentration.It is widely used as a pigment additive.In this paper,six pigments in Monascus pigments were determined by reversed phase liquid chromatography-tandem mass spectrometry detector,and the determination method was verified.Tomato paste was selected as a typical substrate to verify the recoveries of six Monascus pigments.In the validation,the recoveries of different concentrations of panoxamine,Monascus amine,Monascus,erythema,Monascus flavin and Monascus rutile were 101.4%~108.9%,82.7%~96.8%,95.3%~98.0%,87.5%~93.6%,93.5%~97.1%and 89.7%~94.2%,respectively,the relative standard deviation was lower than 15%,which meet the requirements of the national standard GB/T 27404—2008.This research demonstrated that the method used in this study is reliable.
