摘 要:以马铃薯淀粉为原料,在乙醇中溶解,然后分别与氢氧化钠和氯乙酸钠反应,经简单的乙醇清洗处理制备得到取代度高达0.52的羧甲基淀粉。对影响羧甲基淀粉取代度的因素进行探究,最佳制备条件为m(马铃薯淀粉)∶m(氢氧化钠)∶m(氯乙酸)=1∶0.62∶0.7,通过红外光谱、X射线衍射分析、扫描电镜和元素分析对所制备的羧甲基淀粉进行结构表征与研究。结果表明,羧甲基化反应不仅仅发生在马铃薯淀粉的结晶和非结晶区部分,同时发生在颗粒表面和淀粉颗粒内部。In this paper,carboxymethyl starch with a degree of substitution of 0.52 was prepared from potato starch by soaking in ethanol with sodium hydroxide and etherification with chloroacetic acid.The factors affecting the degree of substitution of carboxymethyl starch were explored.The best preparation conditions were potato starch mass to sodium hydroxide mass to chloroacetic acid mass equal to 1∶0.62∶0.7.Infrared spectroscopy(IR),X-ray diffraction analysis(XRD),scanning electron microscopy(SEM)and elemental analysis(EA)were used to determine the structure of the prepared carboxymethyl starch.The results showed that carboxymethylation occurred not only in the crystalline and amorphous regions of potato starch,but also on the surface and inside of starch particles.
