摘　　要：目的与方法:采用高效液相色谱法(HPLC)和高效液相色谱-串联质谱法(HPLC-MS/MS)测定28种液态乳制品中单双糖和乳寡糖的含量。结果:鲜牛奶和纯牛奶中3-岩藻糖乳糖的含量整体高于风味发酵乳和风味酸乳,6-唾液酸乳糖的含量与风味发酵乳和风味酸乳相近。羊乳中3-岩藻糖乳糖的含量和纯牛奶接近,6-唾液酸乳糖的含量和液态牛乳接近。不同风味发酵乳和风味酸乳中乳糖含量差异较大,不同鲜牛奶和纯牛奶中乳糖含量相对稳定。鲜牛奶和纯牛奶样品中基本不含葡萄糖、果糖和蔗糖。结论:本研究通过测定28种液态乳中单双糖和乳寡糖的含量,为消费者购买高品质液态乳提供了科学依据。Objective and Method HPLC and HPLC-MS/MS were used to determine the contents of monosaccharide,disaccharide and lactooligosaccharide in 28 kinds of liquid dairy products.Result The content of 3-fucose lactose in fresh milk and pure milk was higher than that in flavor fermented milk and flavor yoghurt,and the content of 6-sialic lactose was similar to that in flavor fermented milk and flavor yoghurt.The content of 3-fucose lactose in goat milk was close to that of pure milk,and that of 6-sialic lactose was close to that of liquid milk.Conclusion The content of lactose in different flavor fermented milk and flavor yoghurt was quite different,and the content of lactose in different fresh milk and pure milk was relatively stable.There were no glucose,fructose and sucrose in fresh milk and pure milk.The contents of monosaccharide,disaccharide and milk oligosaccharide in 28 kinds of liquid dairy products were determined in order to provide scientific basis for consumers to buy high-quality liquid milk.
