摘　　要：游离氨基酸是蜂蜜中的重要营养组成成分,影响蜂蜜的滋味和口感,是食品品质评价的重要指标。尼勒克县地处伊犁河谷腹地,位于新疆黑蜂保护区,是酿造高品质蜂蜜的优势产区。本研究收集7个来自尼勒克县不同养殖基地的新疆黑蜂蜂蜜样品,按照相关国家行业标准方法测定游离氨基酸(丝氨酸、酪氨酸、异亮氨酸、组氨酸、苏氨酸、赖氨酸、甘氨酸、脯氨酸、精氨酸、缬氨酸、天冬氨酸、谷氨酸、苯丙氨酸、丙氨酸、亮氨酸、蛋氨酸)含量。尼勒克县7个养殖基地新疆黑蜂蜂蜜总游离氨基酸含量种类丰富,药效氨基酸占比较高,滋味氨基酸以芳香族氨基酸和甜味氨基酸为主。本数据集可为新疆黑蜂蜂蜜质量评价提供数据支撑,同时可为研究蜂蜜口感滋味提供思路。As important nutrient component in honey,free amino acid effects the flavour and mouthfeel of honey,it is also an important indicator of food quality evaluation.Located in the hinterland of the Yili river valley,Nilka County is in the Xinjiang black bee conservation area,which is an advantageous production area for brewing high-quality honey.In this study,we collected the samples of Xinjiang Black Bee Honey from 7 production areas in Nilka region,and determined the free amino acid(Serine,tyrosine,isoleucine,histidine,threonine,lysine,glycine,proline,arginine,valine,aspartic acid,glutamic acid,phenylalanine,alanine,leucine,methionine)content in accordance with relevant national standard methods.The total free amino acid content of Xinjiang Black Bee Honey from seven breeding bases in Nilka County is rich,and the effective amino acids account for a relatively high proportion.The taste amino acids are mainly aromatic amino acids and sweet amino acids.This data set provides data support for the quality evaluation of black bee honey in Xinjiang,and provides ideas for the study of honey taste.
