摘 要:预制菜广义上是指以农、畜、禽、水产品为原料,配以各种辅料,经预加工而成的成品或半成品。预制菜省去了人们采购、加工食材的步骤,简化了制作步骤,通过加热或蒸、炒等烹饪方式就能成为消费者餐桌上的特色菜品。预制菜烹饪方便快捷,省时省力,深受消费者喜爱,但食品质量安全仍是消费者最关心的问题。因此,本文从预制菜的生产、加工和销售进行研究,提出保证预制菜质量的措施,使预制菜真正成为放心菜。In a broad sense,prefabricated vegetables refer to finished products or semi-finished products that are made from agricultural,livestock,poultry and aquatic products with various auxiliary materials.Prefabricated dishes eliminate the steps of purchasing and processing food materials,simplify the production steps,and become the special dishes on the table of consumers through heating,steaming,frying and other cooking methods.Prefabricated dishes are easy to cook,time-saving and labor-saving,and are loved by consumers.However,food quality and safety are still the most concerned issues of consumers.Therefore,this paper studies the production,processing and sales of prefabricated dishes,and puts forward measures to ensure the quality of prefabricated dishes,so that prefabricated dishes can truly become safe dishes.
