摘  要:目的分析2个批次猴头菇脂肪油成分。方法采用索氏提取法分别提取2个批次猴头菇脂肪油进行甲酯化,并计算产率;采用气相色谱-质谱联用(GC-MS)技术分析鉴定其脂肪油的化学成分。结果2批猴头菇脂肪油的提取率分别为6.38%和4.27%,共鉴定出43种成分,其中批次1(S1)鉴定出25种、相对百分含量为98.581%,批次2(S2)鉴定出38种、相对百分含量为98.432%;43个成分中酯类20种、烷类6种、羧酸类8种、烯类3种、酚类3种及酰胺类3种;2个批次猴头菇脂肪油中共有成分有20种,在20个共有成分中百分含量>10%的成分为正十六酸(S1为13.464%,S2为18.934%)、油酸(S1为30.796%,S2为22.422%)及10E,12Z-十八碳二烯酸(S1为11.535%,S2为21.193%)。结论不同批次的猴头菇中的脂肪油成分不尽相同,共有成分的含量也有所不同,在猴头菇脂肪油的质量控制与评价及其制剂的二次开发应注意这些特点。Objective To analyze the components of fatty oil in different batches of Hericium erinaceus.Methods The soxhlet extraction method was used to extract fatty oil of Hericium erinaceus in two different batches, methyl esterification was carried out, and the yield was calculated at the same time. Gas chromatography-mass spectrometry(GC-MS) technology was used to analyze and identify chemical components of the fatty oil. Results The fatty oil extraction rates of the two batches were 6. 38% and 4. 27%, respectively. A total of 43 components were identified from the two batches.Among them, there were 25 components identified in batch 1( S1) with a relative percentage of 98. 581%, and 38 components identified in batch 2(S2) with a relative percentage of 98. 432%.Among these 43 components, there were 20 kinds of esters, 6 kinds of alkanes, 8 kinds of carboxylic acids, 3 kinds of alkenes, 3 kinds of phenols, and 3 kinds of amides. There were 20 common components in fatty oil of the two batches. Among the 20 common components, the components with a percentage content of more than 10% were n-hexadecanoic acid( S1 was 13. 464%, S2 was 18. 934%), oleic acid(S1 was 30. 796%, S2 was 22. 422%), 10E, 12Z-octadecadienoic acid(S1 was 11. 535%, S2 was 21. 193%).Conclusion The components of fatty oil extracted from different batches of Hericium erinaceusare different, and the contents of common components are also different.These characteristics should be paid attention to in the quality control and evaluation of Hericium erinaceus fatty oil and the secondary development of its preparations.
