摘 要:马铃薯是食品加工的重要原料,为选择马铃薯炸片专用型品种并提升其商用价值,本研究以西北旱区推广应用的9个马铃薯品种(系)为研究对象,测定其块茎比重、干物质含量、淀粉含量和还原糖含量,并对炸片进行感官评价。结果表明,‘陇薯14号’等6个品种(系)的干物质含量高于20%,淀粉含量高于14.5%,比重高于1.080;‘陇薯3号’等3个品种(系)为高还原糖品种,‘陇薯7号’等6个品种(系)为低还原糖品种;‘陇薯7号’等4个品种的感官评分较高。综上所述,‘陇薯7号’‘L1146-2’‘青薯9号’‘陇薯10号’具有干物质含量高、淀粉含量高、还原糖含量低,感官评价好,为适宜加工炸片的品种(系)。Potatoes are essential raw materials for the food processing industry.In order to select potato varieties suitable for chip processing and enhance the commercial value of potatoes,this paper studied 9 potato varieties cultivated in the arid areas of northwest China,and analyzed specific gravities,dry matter content,starch content and reducing sugar of tuber.Also,it applied sensory evaluation of the color and taste of potato chips.The results showed that dry matter content of 6 potato varieties(such as‘Longshu No.14’)exceeded 20%,starch content of these varieties exceeded 14.5%,and specific gravities of these varieties exceeded 1.080.A total of 3 varieties(such as‘Longshu No.3’)maintained higher reducing sugar content,6 varieties(such as‘Longshu No.7’)maintained low reducing sugar content;and 4 varieties(such as‘Longshu No.7’)remained higher value of sensory evaluation.A total of 4 varieties(‘Longshu No.7’‘L1146-2’‘Qingshu No.9’and‘Longshu No.10’)had higher dry matter content,starch content,lower reducing sugar content and better sensory evaluation scores.Consequently,these varieties were suitable for the processing of potato chips.
