摘 要:目前对鸡蛋等优质肉产品的需求显著提升,鸡蛋的外部质量标准与蛋重、蛋形等指标息息相关,而且内部质量受营养、蛋黄指数、味道等共同影响。该文对鸡蛋质量的评价指标及方法、影响蛋品质的相关因素进行分析。With the improvement of people’s living standards,the demand for high-quality meat products such as eggs has also increased significantly.Egg quality is an important reference factor that affects consumers’ decision-making.The external quality standards of eggs are closely related to egg weight,egg shape and other indicators,and the internal quality is jointly affected by nutrition,yolk index,and taste.This paper analyzes the evaluation indicators and methods of egg quality and the related factors affecting egg quality,in order to provide theoretical reference for improving the development of my country’s egg industry.
