摘 要:牛磺酸在水产动物体内常以含硫游离氨基酸或小分子二肽或三肽的形式存在,其主要生物学功能在于调节机体正常生理机能,如形成结合胆汁酸、调节渗透压、维持细胞膜稳定性及提升抗氧化能力等。在“缺乏牛磺酸的植物性蛋白源及某些新型蛋白源广泛应用于水产饲料”的背景下,水产动物牛磺酸营养研究逐步受到重视。文章综述了水产动物牛磺酸的来源、水产动物牛磺酸的合成能力、水产动物牛磺酸营养需求量、牛磺酸参与水产动物营养物质代谢、牛磺酸对水产动物健康的影响、牛磺酸与其他营养物质的相互作用,以期为牛磺酸在水产动物营养免疫与健康养殖方面的进一步研究提供科学理论基础。Taurine exists in the form of sulfur-containing free amino acids or small molecule dipeptides or tripeptides in animals.Its main biological functions are to regulate the normal physiological functions of the body,such as the formation of binding bile acids,regulation of osmotic pressure,maintenance of cell membrane stability and improvement of antioxidant capacity.Because lacking taurine plant protein sources and some novel protein sources are widely used in aquatic feed,research on taurine nutrition of aquatic animals has been paid more and more attention.This review summarized the sources of taurine in aquatic animal,the synthesis ability of taurine,the nutritional requirements of taurine for aquatic animal,taurine participation in the metabolism of aquatic animal nutrients,the effects of taurine on aquatic animal health,the interaction between taurine and other nutrients to provide a scientific theoretical basis for the further study of taurine in aquatic animal nutrition,immunity and healthy culture.
