摘  要:【目的】研究不同饲养方式对欧拉羊屠宰性能与肉品质特性的影响。【方法】选择放牧、放牧+补饲和舍饲3种饲养方式饲养的欧拉羊为研究对象,饲养120 d,测定羊肉的屠宰性能、物理指标、营养成分、氨基酸组成和脂肪酸组成并进行分析。【结果】补饲和舍饲显著增加了欧拉羊宰前活质量、胴体质量和背膘厚度(P<0.05)。L*值舍饲组极显著高于放牧组和放牧+补饲组(P<0.01),熟肉率和失水率放牧组极显著低于舍饲组和放牧+补饲组(P<0.01),剪切力在3组间差异均极显著且放牧组>放牧+补饲组>舍饲组(P<0.01)。脂肪含量在3组间差异均极显著(P<0.01),放牧组<放牧+补饲组<舍饲组。必需氨基酸含量、非必须氨基酸含量和氨基酸总量在3组间差异均不显著(P>0.05)。舍饲组饱和脂肪酸含量显著高于放牧组和放牧+补饲组(P<0.05),单不饱和脂肪酸含量在3组间差异均显著且放牧组<放牧+补饲组<舍饲组(P<0.05),多不饱和脂肪酸含量在3组间差异均显著且与单不饱和脂肪酸含量相反(P<0.05)。【结论】补饲和舍饲可以改变欧拉羊屠宰性能和肉品质特性,通过转变饲养方式可以更好地发挥欧拉羊的生产潜力。【Objective】This study was conducted to evaluate slaughter performance and meat quality of Oula sheep under different feeding modes.【Method】The Oula sheep were employed and fed for 120 days under three different feeding modes,i.e.,grazing,grazing and supplementary feeding,and stall-feeding,followed by determining slaughter performance,physical index,nutritional compositions,and amino acid and fatty acid compositions of the mutton.【Result】Both the supplementary feeding and stall feeding signifi‐cantly increased the body weight,carcass weight,and the back-fat thickness of Oula sheep(P<0.05).For the physical index of mutton quality,the L*value of stall-feeding group was significantly higher than that of either grazing or supplementary feeding group(P<0.01);the rates of both cooked meat and water loss were significantly lower for the grazing group than the other two groups(P<0.01).In addition,the shearing force was significantly different among the three groups,which was the biggest for the grazing group,fol‐lowed by the supplementary feeding and stall-feeding groups(P<0.01).The fat content was also signifi‐cantly different among the three groups(P<0.01),with the following order:grazing<supplementary feed‐ing<stall-feeding.There were no significant differences in both essential and non-essential amino acid con‐tents,and total amino acid content among the three groups(P>0.05).The content of saturated fatty acid in the stall-feeding group was significantly higher than that in the other two groups(P<0.05);and the monoun‐saturated fatty acid was significantly different among the three groups,with the order as following:grazing<supplementary feeding<stall-feeding(P<0.05).The between-group difference of polyunsaturated fatty acid was also significant,but the order of its content was opposite to the monounsaturated fatty acid(P<0.05).【Conclusion】The supplementary feeding and stall-feeding could obviously alter the slaughter perfor‐mance and meat quality characteristics of Oula sheep,indicating t
