摘 要:研究了温度对瑞香红苹果果实贮藏品质的影响,为生产上不同贮藏期瑞香红保鲜提供技术支撑。以瑞香红果实为试材,设-2、0、4℃3个贮藏温度,贮藏第30、60、90、150、210 d测定果皮L^(*)值、a^(*)值、b^(*)值、h°值和果实硬度、可溶性固形物含量、可滴定酸含量、维生素C含量,调查果实腐烂率和果心褐变指数。结果表明:瑞香红果实短期贮藏(≤30 d)以4℃为宜,节约成本,品质较好;中短期贮藏(≤60 d)以0℃为宜,品质较好;中长期贮藏(≥90 d)以-2℃为宜,口感最佳,但贮藏期不宜>210 d。To explore the effect of temperature on the quality of’Ruixianghong’fruit during storage,so as to provide technical support for the preservation of’Ruixianghong’apple with different storage periods in production.’Ruixianghong’fruit was used as the experimental material.Three storage temperatures(-2,0,4℃)were set.The peel L^(*) value,a^(*) value,b^(*) value,h°value,hardness,soluble solid,titratable acid and vitamin C content were measure at 30,60,90,150 and 210 days of storage.The fruit decay rate and core index were investigated.The results showed that 4℃was suitable for short term storage(≤30 days)of’Ruixianghong’fruit,which could save cost and have better quality.0℃is suitable for medium and short-term storage(≤60 days),and the quality is better.For medium and long-term storage(≥90 days),it is appropriate to-2℃for the best taste,but the storage period should not exceed 210 days.
