摘  要:为了对比脱皮制粉工艺和传统制粉工艺对藜麦抗氧化活性和降糖降脂生理功能的影响,测定了藜麦脱皮前后总酚、总黄酮、皂苷含量以及乙醇-丙酮提取物抗氧化活性及其对α-葡萄糖苷酶和胰脂肪酶的抑制率,并分析其降糖降脂的生理功能。结果表明,传统制粉工艺制备的藜麦原粮粉提取物的总酚、总黄酮和皂苷含量均高于脱皮粉,且藜麦原粮粉提取物的总抗氧化能力、DPPH自由基、ABTS自由基、超氧阴离子自由基(O_(2)^(-)·)和羟自由基(·OH)清除能力显著高于脱皮粉;藜麦原粮粉提取物对α-葡萄糖苷酶和胰脂肪酶的抑制率显著高于脱皮粉。与藜麦原粮粉相比,藜麦脱皮粉的活性物质、抗氧化活性和体外降糖降脂能力虽有所降低,但仍呈现出较强的功能特性。In order to explore and compare the effects of peeling and flour milling process and traditional flour milling process on the antioxidant activity of quinoa and the hypoglycemic and lipid-lowering physiological functions.In this study,the content of total phenols,total flavonoids,and saponins of quinoa before and after peeling,the antioxidant activity of the extract of ethanol-acetone and its inhibition rate ofα-glucosidase and pancrelipase were determined,and the hypoglycemic and lipidlowering physiological functions were analyzed.The results showed that the total phenolic,total flavonoids,and saponin contents of quinoa raw grain powder extract made by traditional flour milling process were higher than that of peeling powder.Moreover,the total antioxidant capacity,scavenging ability of DPPH free radicals,ABTS free radicals,superoxide anion radicals(O_(2)^(-)·),and hydroxyl radicals(·OH)of quinoa raw grain powder were significantly higher than those of peeling powder.The inhibition rate of quinoa full powder extract onα-glucosidase and pancrelipase was higher than that of peeling powder.Compared with quinoa raw grain powder,active substances,antioxidant activity and the hypoglycemic and lipid-lowering ability in vitro of quinoa peeling powder decreased,it still showed strong functional characteristics.
