摘  要:本研究采用单因素试验和响应面法优化黑果腺肋花楸真空冷冻干燥工艺,并将该工艺获得的黑果腺肋花楸的原花青素含量与鼓风干燥后黑果腺肋花楸的原花青素含量进行比较。结果表明:影响黑果腺肋花楸复水比的主要因素依次为干燥时间、加热板温度和真空度;黑果腺肋花楸真空冷冻干燥最佳工艺条件为加热板温度37℃、真空度21 Pa、干燥时间67.5 h,黑果腺肋花楸复水比为4.58,其所含原花青素含量优于鼓风干燥产品。In this study,single-factor experiment and response surface methodology were used to optimize the vacuum freeze-drying process of Aronia melanocarpa.The proanthocyanidin content of Aronia melanocarpa obtained by this process was compared with that of Aronia melanocarpa after blast-drying.The results showed that the main factors affecting the rehydration ratio of Aronia melanocarpa ranked as follws:drying time,heating plate temperature and vacuum degree.The optimum process conditions for vacuum freeze-drying of Aronia melanocarpa were heating plate temperature of 37℃,vacuum degree of 21 Pa,drying time of 67.5 h,the rehydration ratio of Aronia melanocarpa was 4.58,and its content of proanthocyanidin was better than that of blast-drying products.
