摘 要:探究中红外光谱法鉴别核桃粉中掺杂花生粉和葵花籽粉的可行性,为核桃粉真伪判别提供参考依据。以脱脂核桃粉为研究对象,分别掺入质量分数1%~40%(1%, 5%, 10%, 20%, 40%)的脱脂花生粉、脱脂葵花籽粉,使用主成分分析法(PCA)对采集的中红外光谱数据进行定性分析和异常值检测,采用簇类独立软模式法(SIMCA)和偏最小二乘判别分析法(PLS-DA)对光谱进行建模与分类鉴别。PCA结果表明,脱脂核桃粉的不同掺杂及其不同掺杂质量比之间的分类明显。利用PLS-DA模型对掺杂葵花籽粉和掺杂花生粉的训练集和测试集识别正确率在71%~87%。利用SIMCA建立的不同掺杂样品识别模型训练集识别率均为100%,测试集识别率为80%~100%。经比较,SIMCA模型效果最佳。中红外光谱结合SIMCA法可以实现对核桃粉中掺杂不同比例的脱脂花生粉和脱脂葵花籽粉的快速鉴别。To explore the feasibility of identifying walnut powder doped with peanut powder and sunflower seed powder by mid-infrared spectroscopy,and to provide a reference basis for identifying the authenticity of walnut powder,taking defatted walnut powder as the research object,defatted peanut powder and defatted sunflower seed powder with the mass percentage of 1%-40%(1%,5%,10%,20%,and 40%) were added,respectively.The principal component analysis(PCA) was used for qualitative analysis and outlier detection of the collected mid-infrared spectral data.Soft independent modeling of class analogy(SIMCA) and partial least squares discriminant analysis(PLS-DA) were used to model and classify the spectra.The result showed that principal component analysis was used to analyze the adulterated defatted walnut powder,and the classification of different adulterated walnut powder mass ratios was obvious.Using the PLS-DA model,the recognition accuracy of the training set and a test set of doped sunflower seed powder and doped peanut powder was 71%-87%.The recognition rate of training set and test set of diferent doping sample recognition models established by SIMCA was 100%and 80%-100%.By comparison,the SIMCA model had the best efect.The rapid identification of defatted peanut powder and defatted sunflower seed powder in walnut powder could be realized by mid-infrared spectroscopy combined with the SIMCA method.
