摘 要:采集云南省4个地区21个咖啡豆主产地的32个小粒咖啡豆样本,利用微波消解对样品进行处理,采用原子荧光对小粒咖啡豆中砷、汞进行分析研究,采用石墨炉原子吸收对铅、镉进行分析研究,通过靶标危害系数(THQ)和总危害指数(HI)对铅、镉、汞3种元素进行非致癌风险评价。结果表明, 4种金属元素相关系数为0.998 5~0.999 6,线性关系良好,适合小粒咖啡豆中4种重金属元素含量的测定。4种重金属元素含量的检测结果均符合NY/T 604—2020《生咖啡》质量卫生标准。小粒咖啡豆中铅、镉、汞非致癌健康风险镉高于铅、汞, THQ和HI均远小于1,人体通过小粒咖啡豆摄入的铅、镉、汞不会对人体造成非致癌伤害,云南小粒咖啡豆可作为咖啡生产加工企业的优质原材料。A total of 32 samples of small cofee beans from 21 main cofee producing areas in 4 regions of Yunnan Province were collected.The samples were processed by microwave digestion.Arsenic and mercury in small coffee beans were analyzed by atomic fluorescence,lead and cadmium were analyzed by graphite furnace atomic absorption,and the noncarcinogenic risk of lead,cadmium and mercury was evaluated by target hazard coefficient(THQ) and total hazard index(HI).The results showed that the correlation coefficients of four metal elements ranged from 0.998 5 to 0.999 6,and the linear relationship was good,which was suitable for the determination of four heavy metal elements in small coffee beans.The detection results of the contents of four heavy metal elements all met the quality and health standards of NY/T 604—2020Raw coffee.The non-carcinogenic health risks of lead,cadmium and mercury in small cofee beans were higher than those of lead and mercury,and THQ and HI were far less than 1.The lead,cadmium and mercury consumed by human body through small cofee beans could not cause non-carcinogenic harm to human body.Yunnan small cofee beans could be used as highquality raw materials for cofee production and processing enterprises.
