野生马泡瓜营养成分测定和抗氧化评价

摘　　要：马泡瓜是原产自非洲的葫芦科作物,具有潜在的药用、食用和育种利用价值。在测定马泡瓜营养成分的基础上,对马泡瓜抗氧化能力进行评估。结果表明:马泡瓜营养成分丰富,富含维生素C、维生素E等功能成分,其中维生素C含量为131 mg/kg,是丝瓜的2.62倍、黄金瓜的6.55倍、南瓜的1.63倍;维生素E含量为77.93 mg/kg,是南瓜的2.36倍;可溶性糖含量为7.63%;游离氨基酸和必需氨基酸含量分别为5429、1490 mg/kg;同时,马泡瓜具有较强的抗氧化能力,在其样品浓度为0.10 g/mL时,羟基自由基清除率为82.10%,并且其抗氧化能力随着提取液浓度的增加而增加,呈现出线性变化。Cucumis melo L.var.agrestis Naud.is a cucurbitaceae crop native to Africa,which has potential medicinal,edible and breeding values.This paper has tested the nutritional components of Cucumis melo L.var.agrestis Naud.and evaluated its antioxidant activity.The results show that Cucumis melo L.var.agrestis Naud.is rich in nutrients,of which free amino acids,essential amino acids and soluble sugar contents are 5429 mg/kg,1490 mg/kg,and 7.63%,respectively;it is also rich in funtional components,containing 131 mg/kg VC which is 2.62 times that of luffa,6.55 times that of golden melon and 1.63 times that of pumpkin,and its VE content is 77.93 mg/kg which is 2.36 times that of pumpkin.Cucumis melo L.var.agrestis Naud.has a strong antioxidant capacity;its scavenging rate for hydroxyl radicals is 82.10%at an extract concentration of 0.10 g/mL,and its antioxidant capacity increases with the increase of the extract concentration,showing a linear change.
