摘  要:【目的】偃松种仁营养价值丰富,本研究以4个种源的偃松种仁为研究对象,测定其营养成分,为探讨不同种源偃松种仁营养成分的差异提供依据。【方法】蛋白质的测定采用超声波辅助提取,紫外分光光度法测定;油脂含量的测定采用索氏提取法;多糖测定采用苯酚—硫酸法;粗纤维测定采用食品安全国家标准中相应成分的检测方法进行检测,每个实验均设置3次重复。【结果】4个种源蛋白质、脂肪、粗多糖、粗纤维平均含量分别为19.97%、62.23%、1.06%、11.59%。蛋白质和粗多糖呈显著负相关关系,相关性系数为-0.985,其他性状之间相关性不显著。【结论】内蒙古地区2个种源的蛋白质含量、粗纤维含量大于黑龙江地区2个种源的平均值,而内蒙古地区2个种源的脂肪含量、粗多糖含量则小于黑龙江地区2个种源的平均值。【Objective】The seed kernel of Pinus pumila has rich nutritional value.In this study,the kernel of Pinus pumila from four provenances was used as the research object,and its nutritional composition was determined,so as to provide a basis for exploring the differences in nutritional composition of Pinus pumila seed kernel from different provenances.【Method】The protein was determined by ultrasonic extraction and UV spectrophotometry.Soxhlet extraction method was used for determination of oil content.Polysaccharide was determined by phenol-sulfuric acid method.Crude fiber is determined by the method of detecting the corresponding components in the national food safety standards.Each experiment was set up with three replicates.【Result】The average contents of protein,fat,crude polysaccharide and crude fiber of the four provenances were 19.97%,62.23%,1.06%and 11.59%,respectively.There was a significant negative correlation between protein and crude polysaccharide,and the correlation coefficient was-0.985.There was no significant correlation between other characters.【Conclusion】The protein content and crude fiber content of the two provenances in Inner Mongolia were higher than the average of the two provenances in Heilongjiang.However,the fat content and crude polysaccharide content of the two provenances in Inner Mongolia were lower than the average of the two provenances in Heilongjiang.
