摘  要:肉类是人们生活中不可缺少的一部分,腌制肉制品在生活中极为常见。随着科技的发展,腌制工艺出现了多种新的技术,而腌制过程中由于原料、工艺、添加剂等会对肉制品质量和安全性产生多种影响。亚硝酸盐可以做为护色剂,但是大量亚硝酸盐进入人体后会与氨基酸分解的氮元素发生反应,生成亚硝胺等强致癌性化合物;肉制品在腌制过程中会添加食用盐,而过量食盐的摄入会对代谢等产生影响,引起高血压等慢性病等;肉制品腌制过程中会接触到多种物品,且本身营养丰富,若长时间存放容易造成生物污染。随着消费者对营养均衡的需求和人们生活水平的提高,食用肉制品的越来越多;同时由于各种各样的肉制品的独特风味广受消费者偏爱,因此腌制肉制品的安全十分关键。通过对腌制工艺的安全性进行分析,并对存在的问题提出相应的解决方法,以期为腌制肉品的更好发展提供理论参考。Meat was an indispensable part of people's life,and cured meat products were very common in life.With the development of science and technology,avariety of new technologies had emerged in the curing process,and the quality and safety of meat products would be affected by raw materials,processes,and additives in the curing process.Nitrite could be used as a color fixative,but a large amount of nitritewould react withthe nitrogen elementdecomposed by amino acidafter entering the human body,and strong carcinogenic compounds such as nitrosamine would be formed.Edible salt was added to meat products during curing process,and excessive salt intake would affect metabolism and caused chronic diseases such as hypertension.The meat products were exposed to a variety of items during curing process,and they were rich in nutrients,and it was easy to cause biological contamination if stored for a long time.With the demands of consumers for balanced nutrition and the improvement of people's living standards,more and more meat products were consumed.At the same time,because of the unique flavor of various meat products,they were widely favored by consumers,and the safety of cured meat products was very important.The safety of the curing processwas analyzed,and the corresponding solutions to the existing problems were put forward,andit provided theoretical reference for the better development of cured meat.
